Fake Elvis and Chili with Cinnamon Rolls

So, I went to a conference in Las Vegas last week…Beyond all the professional stuff I obviously took part in, the highlight was definitely the smarmy, leather-clad Elvis impersonator. To be fair, he could actually sing and the middle-aged librarians in the room went wild. Just close your eyes and imagine THAT for a second. Guaranteed to improve your mental well-being.

I flew back from Vegas on Friday afternoon and Telfer and I had an uneventful, but remarkably relaxing weekend. He is busy preparing his fellowship applications for 2008-2009 and I am you know, very busy with all the reading I must do. Well, I didn’t laze around the entire weekend…I did make black bean chili and homemade cinnamon rolls. If you are asking yourself whaaat? Chili and cinnamon rolls? People in my neck of the woods (Eastern Washington and Oregon) eat them together. We dip the cinnamon rolls into our chili, and let me tell you, it is good.

Becky – I think the key here is EASTERN oregon and washington. Seriously, chili and cinnamon roll day was on our school lunch menu…the only time I ever got hot lunch.

We called them “Idaho Hay Stacks” They included chips with chili and cheese on top. On the side was always the cinnamon roll. It was always a day that I picked for hot lunch!
